Hotel Fauchere: Sushi Pizza

Sushi Rice 

Sushi Pizza- Hotel Fauchere

- ¼  Cup Sushi Rice (Brand)
- 1/2 Cup Cold Water
- 1tsp Vinegar
- 1 tsp Sugar

Rinse the rice thoroughly under cold running water until the water runs clear. Place the rice in a medium sized heavy bottom pan and put on the stove with the cold water. Over medium high heat, bring the rice to a boil uncovered. Once a boil is reached, cover immediately and turn heat down to Medium low for 10 minutes. Turn heat down to low for 15 minutes. Turn heat off and allow the rice to rest covered and untouched for 20 minutes. 


- 1/4 Cup Orange Tobiko Caviar (Flying fish roe, many seafood purveyors should be able to order this for you. It may come in larger quantities, but it freezes well, and you will definitely make this dish enough to use it up)
-  4 cups Mayo
- 4 Tbsp Siracha
- 4 tsp Cayenne
- 1/3 cup Soy
- 4 oz Rice Wine Vinegar
- 4 oz Mirin
- 4 Tbsp Fish Sauce

In a large bowl, mix all of the ingredients together, wrap tightly and chill in the refrigerator. 

Tempura Batter

- 1 Eggs
- 1 cup Club Soda, Ice Cold
- 1 cup Flour

Combine your wet ingredients. Wisk as you pour the wet mix into the flour. Wisk only until the mixture is evenly blended and most lumps are gone. No more than 20 seconds or so.
