French Manor Inn and Spa Recipe: Ginger Glazed Mahi-Mahi

*Makes 4 servings

- 3 Tbs. honey
- 3 Tbs. soy sauce
- 3 Tbs. balsamic vinegar
- 1 tsp grated fresh ginger
- 1 clove garlic; crushed
- 2 tsp. olive oil
- (4) 6 oz. Mahi-Mahi filets
- 1 Tbs. canola oil
- salt and pepper to taste

1. In a shallow dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil. Season fish filets with salt and pepper and place them into the marinade. Cover and refrigerate for 20 minutes.

2. Heat canola oil in a large sauté pan over medium-high heat. Remove fish from marinade and reserve marinade to the side. Fry fish for 4-6 minutes on each side. Cook fish until it flakes easily with a fork.

3. Remove fish and pour remaining marinade into sauté pan. Reduce marinade over medium heat until it reaches a glaze consistency. Spoon glaze over fish and serve.
