Patisserie Fauchere Holiday Recipe: Apple Bread Pudding with Apple Brandy Sauce

Yields 6-7 Bread Puddings 

Ingredients: Apple Bread Pudding- Hotel Fauchere

Bread Pudding

- 1 ½ cups heavy cream
- 3 eggs
- 3 tablespoons brown sugar
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- 3 tablespoons maple syrup
- ½ loaf of bread (approximately 5 cups)
- 1 apple

Apple Brandy Sauce

- ½ cup butter
- ½ cup sugar
- ½ cup maple syrup
- 1 cup heavy cream
- ¼ cup apple brandy
- 2 egg yolks, lightly beaten
- Pinch of salt

Instructions:

Bread Pudding 

1. Mix first 7 ingredients with whisk
2. Cut bread into approximately ½ inch cubes
3. Pour liquid mixture over bread, toss until bread is evenly coated, set aside to soak
4. While bread is soaking, dice apple into ¼ inch pieces
5. Combine apple with bread mixture
6. Grease muffin pan and fill generously
7. Bake at 350 degrees for 20-30 minutes or until golden brown and slightly firm to touch
8. Let cool slightly then unmold from pan, serve warm. 

Apple Brandy Sauce

1. In medium saucepan, melt the butter over low heat
2. Add sugar and maple syrup, stil until combined
3. Whisk in heavy cream, brandy, egg yolks, and salt
4. Continue whisking for 2-3 minutes, until sauce has thickened, do not boil
5. Serve warm over apple bread pudding
